A HIGH BACKREST

A tall person obviously has a long back and therefore needs a high backrest!
Backrests are usually adjustable in height, but it is preferable that they are high enough from the start. You should also look for an office chair that has a built-in lumbar support to support your lower back. If not, you can also find one separately and add it to your chair.
Headrest or no headrest? A headrest is very useful for maintaining the neck, but if you are very tall, check that it can be raised high enough for your morphology.

A chair on wheels is great. They make it easier to move around and pick up things nearby. It also makes it easy to change position in front of a computer to avoid the fatigue of sitting still. Be careful, however, that the castor wheels are suitable for the floor (hard or soft) to avoid uncontrolled stunts.
